DAILY REPORT (6/11/2017)
Hi there..
Today we were back again in the kitchen. And this week is our last week on the kitchen. Next semester we are not practice in the kitchen anymore. So today my partner were Chan and Raiz. And today we were making pia cake, sourdough white pan bread, and tape.
Last week we were making sourdough and today we were using it to make white pan bread. We just mixed hard flour, salt, sugar, fresh milk, water, olive oil and mixed it with rubber spatula and rest it about 2-3 hour. After that we just rest it overnight in the chiller. And tomorrow we will shape and bake it.
We never made Pia cake before. So all of us just search the reference on the internet and made it with our partner. I found the recipe on the pinterest and for the first try I think it was perfect. We made the layer of the dough with crisp and sandy texture.
For the tape we used 700 gr white gluten rice and 300 gr black gluten rice. Mixed, washed and steam it until cooked. After that we cold it down, and flushed it with air daun saji and hot water. And steamed again until the water submerge into the rice. After that cold it down again and mixed it with ragi tape and shaped it like a small ball and fermented for 3 days
