DAILY REPORT (23/10/2017)
Hiii.. Back again to the busy week in the kitchen. Based on Croissant Class from Chef Alex 2 weeks ago, today we were making croissant and danish with own hand. Actually I was excited but little bit afraid because if we failed we would be punished by Sir Faisal, and we would be loosing our weight again because we had to run on the field and embarrassed our self.
Today my partner were Shendy and Hardy and together we would make croissant and danish. After the ingredients was ready, we started to make croissant dough but before that, freeze the butter in the freezer. Combine dry and wet ingredients to make a dough, Chef Alex always said use your feeling to make perfect croissant, you must know the texture and the taste of the dough. And after the dough was done, I rolled it and chill about 15-20 minutes. In here I used triple single method, but is depends on you. If you want, you can use single and double folded method. After folded, shaped croissant (30 gr/pcs) and danish too. Then don't forget to brushed it with egg washed baked it.
I could say that today I didn't face any big problem to make croissant and danish. And our result was not bad as we predicted, it was quite good but we shouldn't be proud and felt enough for that. We still have much thing to learn and the important thing is we must never tired to learn and learn again. Because on this life there are so much things to learn about.
